I have monitored mine over many years, and sometimes it is illogical. Mine was higher a few weeks ago after not much exercising for 4 weeks. Now it has come down a bit on a varied diet of slow stuff.
I found it to be lowest after some really hard long workouts (5 X 4 minutes up a ski slope).
Never noticed a change due to sickness, but maybe a rise when getting to overtraining (which is doubtful I have ever done).

I totally agree not always logical, but mine seems a pretty good measure of when I become ill at least. Shot up to 70 with my cold in Sweden at ski-o, and didn't feel well. Think anything under 60 is safeish to train, but correlation of RHR between 50 and 60 with anything doesn't seem super strong...
